Outside, the trees sway
And chipmunks scatter.
It’s time to get cozy.
I pull my leggings and sweatshirt, start a fire and boil water. In swirls the Cream of Buckwheat, until just right.
This breakfast is certainly simple, warm and nostalgic.
When making, I feel like a kid bouncing from Malt O Meal to Cream of Wheat, but this bowl differs in a couple of ways:
Buckwheat
- despite its name, Buckwheat doesn’t contain wheat
- a seed within the same family as amaranth and quinoa
- contains high quality protein, rich in minerals and antioxidants
- scores low to mid on the glycemic index
Also different, this bowl is adulted (word!) with coconut sugar, sliced fruit, nuts, raisins, and chia or hemp seeds.
The how to is easy as well. The purchased box is called Pocono, but Bob’s Red Mills brand is good too.
With the wind whipping, once cozy and curled by the fire with this bowl, it’s nice to see some things never change.
