A close up of a bowl of Herb Marinated Artichoke Hearts with vibrant red flowers in the background.

Alone, on the side, or wedged in hallelujah! Long live herb marinated artichokes. But all aren’t created equal. No. We’ve been there: napkin, trash, shoot! do I have to eat this to be polite? vs. need you now and for the rest of my days. Delicate handle, then immerse hearts slow over low until herbs,…

Easy Udon Noodle Vegetable Stir Fry

A for full of Easy Udon Noodle Vegetable Stir Fry

Cook, bake, eat. Cook, bake eat. Along with energy, a fridge full dwindles into toast, peanut butter, banana. Ginger,…

A bowl of Carrot, Orange & Dill Soup with crispy onions a top and bread in the background.

The wind whips, whistling through the trees. With food and twigs in mouth, chipmunks and squirrels scamper. Sun shines, but ominous skies tattle of snow and rain. Vegetable Bourguignon

May 7, 2020 By Jen

/ Deserted on an island and served one meal for the rest of my sand filled days—Vegetable Bourguignon. I still can’t spell “Bourguignon” but love these ingredients and especially the woman behind the making. Would Julia Child approve of vegetables in place of boeuf? I don’t know but hanging on her every explaining word, I…

Sweet Potato Black Bean Enchiladas

April 28, 2020 By Jen

A dish of Sweet Potato Black Bean Enchiladas topped with lettuce, bell peppers, and green onions

/ Cinco de Mayo’s a week away. We devoured favorite enchiladas without realizing the month or approaching holiday. Think roasted sweet potatoes wrapped in creamy avocado, onion, black beans and spice. Line tortillas, then blanket with green garlic sauce and top with cheese and cilantro. Bite, marvel and spend the 5th of May or any…

Ten years. I used to listen to my parents talk about time passing in a blink. I’m them, in more ways than I can count. Time is strange. Hello and Welcome!

In these pages you’ll find vegetable dishes to savor and sustain along with dessert recipes to gather around or share with neighbors, co-workers, or anyone in need of extra love.

A word on altitude, I’ve cooked and baked at both sea level and in Lake Tahoe. Many recipes aren’t affected by elevation, but if they are, I’m sure to note the difference within the ingredients.

We love to share, so thank you for stopping by because along with my husband Dave and our dog Rainey, each recipe is a thrill and therapy in creation. I hope the feeling comes through in every post and especially bite.
