I now interrupt our regularly scheduled program of virus, wildfires, smoke and division to introduce you to ooeey, gooey chocolate cherry coconut brownies.
Brownie comes in peace. Let his flourless uber chocolate one bowl ease whisk you from wonder, wear, frazzle and fray.

Gather Ingredients
eggs ~ coconut sugar ~ coconut oil ~ salt ~ almond extract ~
unsweetened cocoa powder~ chocolate chips ~ cherries ~ coconut
Toast unsweetened coconut.
Microwave coconut oil until just melted and let cool slightly.
Add egg, coconut sugar, coconut oil, salt and almond extract; give a good stir, making sure the eggs are broken up.
In two batches, add the cocoa powder. Cocoa powder can be disastrous covering the counter, you, your dog — so whisk slow and around the bowl until combined, then spatula from bottom to top, making sure everything’s mixed but not over-mixed.
Fold in chocolate chips, halved cherries and coconut.
Pour/spatula the batter (pretty thick) into the pan and even side to side.
Sprinkle the toasted coconut and a few extra chocolate chips

- Fill a glass with hot water.

Chocolate Cherry Coconut Brownies
Ingredients:
8 - inch square
- 6 large eggs - room temperature
- 1½ cups coconut sugar - or 1 cup cane sugar
- 1/2 cup + 2 Tablespoons coconut oil - microwave until about melted, then cool slightly
- 1½ cups unsweetened cocoa powder
- 1/4 teaspoon sea salt
- 3 teaspoons pure almond extract (sea level = 2½ teaspoons)
- 1/3 cup chocolate chips
- 1/2 cup unsweetened coconut - shredded, toasted
- 3/4 cup dark sweet cherries - fresh or frozen, cut in half
Instructions
- Preheat oven to 350 degrees F. line an 8" square pan with parchment paper. Set aside.
- On a piece of aluminum foil spread both coconut flakes (chips, if using). Place the foil directly on the toaster oven rack. Turn dial or set to medium. The coconut is fairly quick to brown, so keep a watchful eye. Once golden and fragrant, remove from the oven. If left on the foil, coconut will continue to cook, so cool on a plate or in a bowl.
- In a medium bowl, hand whisk eggs, sugar and coconut oil, salt and almond extract until combined. Slow whisk cocoa until just incorporated. With a spatula, fold in chocolate chips, toasted coconut and cherries. Make sure to scrape bottom to top, as cocoa powder likes to hang in the bottom and corners of the bowl.
- The batter will be fairly thick. Spatula into prepared pan, then even side to side and sprinkle the top with extra coconut.
- Bake for 35-42 minutes or until a center inserted toothpick shows clean with the exception of chocolate chip trace. I know, kind of hard to tell. The center will puff and when moved side to side will remain stable and the edges starting to brown and pull from the sides too. Ovens vary, so it's best to start checking around 34 minutes. In my oven, brownies take about 37 minutes. Transfer to a wire rack and let cool completely in the pan.
- Once cool, cut and fall Under the Cherry Moon.
Notes
- Brownies can be covered in the pan or an airtight container, store in the refrigerator then take out as you wish and enjoy at desired temperature.
- For fudge-y brownies bake less, for a cake-y brownie bake more.
- If using larger coconut flakes, approximate nine imaginary cuts and add flakes to the middle.
- Vanilla and orange flavor taste great in place of almond too!
