I’m a sucker for a yolk that coats then saturates.
I prefer a gooey yet slime free white and yolk, so over medium please. As for what that yolk soaks, I’m open to anything that makes like a sponge and sops: crunchy toast topped with butter or avocado, smashed garlic roasted potatoes. But lately, I’m head over feet for sweet potato hash and pea shoots.
While making a sweet potato quinoa bowl for lunch, I make extra hash for breakfast or breakfast for dinner.
The Making of Sweet Potato Hash
The sweet potato hash can be made the day of or day(s) in advance. I prefer to make ahead, because coffee is the first thing on my morning brain.
Preheat the oven to 425°F.
Add sea salt, garlic powder, smoked paprika, and pepper to a tiny bowl. Manually or with a food processor, grate the sweet potato and transfer to a medium-sized bowl. Ghee, olive oil, or the equivalent can be used. If using ghee, put 1 tablespoon in a small bowl and melt in the microwave or oven. Drizzle oil or ghee and sprinkle the seasoning mixture over the sweet potato hash and stir to coat. On the largest baking sheet you own, spread the sweet potato hash out and across.
Bake for 20 minutes, stiring halfway through. To crisp the sweet potatoes, turn the oven to broil. While stirring maybe twice, keep a careful watch, so the hash doesn’t burn. Remove from the oven and let the hash crisp further on the pan. Um um baby.
If you’d like, add slices of avocado, then pea shoots. The most spring-y summer-y looking things my eyes ever did see.
They make me happy when skies are blue, or grey, or any color.
Now, how do you like your egg?
Over easy.

hard?
Scrambled.
Does yolk gross you out? Although I like eggs now, there are other times too.
On this day in July, make an egg to your liking.
Then, break, breathe, and take in each bite.
Eggs Over Pea Shoots & Sweet Potatoes
Ingredients:
Sweet Potato Hash
- 1/4 - 1/2 sweet potato - medium, shredded
- 1 Tablespoons ghee, grapeseed or olive oil - melt ghee in microwave or oven on the baking pan
- ¼ - ½ teaspoon fine sea salt
- 1 teaspoon garlic powder
- ¼ teaspoon smoked paprika
- ¼ teaspoon pepper
Eggs
- 2 teaspoons olive oil
- 1 - 2 eggs - cooked to your preference
- 1 pea shoot handful
- salt and pepper
- 1/4 avocado - sliced (optional)
Instructions
- Preheat oven to 425°F. Add all sweet potato seasonings to a small bowl. Manually or with a food processor, grate the sweet potato. Transfer to a medium-sized bowl. If using oil, drizzle the sweet potato hash and give a quick stir. Sprinkle the seasoning mixture and stir to coat. On the largest baking sheet you own, spread the sweet potato hash out and across, giving as much room as possible. Bake for 20 minutes, stiring halfway through. To crisp the sweet potatoes, turn oven to broil. Watch carefully so the hash doesn't burn, stir maybe twice. Remove hash from oven and let sit on the pan, as it will crisp more.
- If using day old sweet potato hash, spray or add one teaspoon oil to medium-sized pan and set over medium heat. Once heated, add sweet potato hash and stir occassionally until crisp. Remove from heat, place on a plate and cover.
- Scrape any remaining sweet potato from pan. Spray or add a small amount of oil to heated pan. Once to temprature, crack one to two eggs into the pan and sprinkle with salt and pepper. When the egg(s) reach over easy, medium or hard yolk, flip. While the alternate side cooks, add (optional) avocado slices, and pea shoots to sweet potato hash. Place cooked egg over the pea shoots.
- Assemble: Sweet potato hash, avocado slices (optional), pea shoots, eggs, salt and pepper. Or, to your heart's desire 😍Garnish ideas: hot sauce, paprika, sunflower seeds, sesame seeds, Everything but the Bagel Sesame Seasoning, etc. Break and savor each yolk soaked layer.
