Preheat oven to 425°F. Add all sweet potato seasonings to a small bowl. Manually or with a food processor, grate the sweet potato. Transfer to a medium-sized bowl. If using oil, drizzle the sweet potato hash and give a quick stir. Sprinkle the seasoning mixture and stir to coat. On the largest baking sheet you own, spread the sweet potato hash out and across, giving as much room as possible. Bake for 20 minutes, stiring halfway through. To crisp the sweet potatoes, turn oven to broil. Watch carefully so the hash doesn't burn, stir maybe twice. Remove hash from oven and let sit on the pan, as it will crisp more.
If using day old sweet potato hash, spray or add one teaspoon oil to medium-sized pan and set over medium heat. Once heated, add sweet potato hash and stir occassionally until crisp. Remove from heat, place on a plate and cover.
Scrape any remaining sweet potato from pan. Spray or add a small amount of oil to heated pan. Once to temprature, crack one to two eggs into the pan and sprinkle with salt and pepper. When the egg(s) reach over easy, medium or hard yolk, flip. While the alternate side cooks, add (optional) avocado slices, and pea shoots to sweet potato hash. Place cooked egg over the pea shoots.
Assemble: Sweet potato hash, avocado slices (optional), pea shoots, eggs, salt and pepper. Or, to your heart's desire 😍Garnish ideas: hot sauce, paprika, sunflower seeds, sesame seeds, Everything but the Bagel Sesame Seasoning, etc. Break and savor each yolk soaked layer.
