I have an addiction. Its name, Spice Roasted Chickpea. Sounds cute but means business in the health and flavor department. I like that.
Protein/fiber packed chickpeas – a bowl without them, forget it. Soup or salad with croutons, not since roasted chickpeas. Zesty and fresh, they have the crunch I crave with the bonus of keeping me full.
A Few Key Tips When Making
Dry, dry, dry the cooked or rinsed and drained chickpeas.
Spray chickpeas with a light coat or drizzle of oil.
Spread in a single layer on a baking sheet.
Season the last ten minutes of baking.
Ready, set, roast.

Ingredients:
- 15 ounce chickpeas canned or 1½ cups cooked drained, rinsed, and dried
- 1-2 teaspoons extra virgin olive, avocado, or grapeseed oil
- 1 teaspoon chili powder
- ¼ - ½ teaspoon salt
- 1/4 teaspoon ground pepper
- ¼ - ⅛ teaspoon cayenne pepper - optional
Instructions
- Preheat oven to 450° F. Line a large baking sheet with parchment or a Silpat.
- Place the chickpeas between paper or dishtowels and with light hands, press and roll to absorb liquid.
- In a medium bowl, combine chickpeas with oil; stir to coat.
- Scatter the chickpeas across the pan and place on the middle oven rack. Bake for 25 minutes. Halfway through sprinkle with seasoning and roll and shake the chickpeas to coat. Keep watch towards the end and remove when browned and crisp.
- Enjoy as a snack, in salads, soups, bowls, and to compete for who can throw and catch the most in their mouth!
