A vegetarian sandwich. Simple: two pieces of bread, mayo/mustard/veggie haul — not so fast. Bread, vegetable width, assembly and order matter. A well made sandwich = art.
Here’s to you soft, crunchy, mildly sweet, spiced with gush in all the right places vegetable sandwich.
What takes a sandwich from ordinary to
Simply Sublime!
First things first. Edge to edge ingredients built bread up.
Bread – Un-toasted Dave’s Killer Good Seed’s my main squeeze for this sandwich. It’s super soft, does a body good and those tiny chia seeds— all fallen must be eaten, weird but yes. And their story, heart on a string. But that’s my favorite, so your two favorite pieces flat on a board.
Mayo/Mustard – of course Hummus fits “transcendent” criteria but I like mayo and all hail good ole’ yellow mustard but who doesn’t love dijon too? Me on this particular day. After years of tasting, survey stands: this yellow and this dijon. To me, balance is struck in not too gushy but the perfect amount with every bite. Where that gush comes from? For me, a decent amount of mayo (hummus), a few slices mashed avocado and an absurd amount of mustard. What’s your ratio of preference?
Black Pepper/Garlic Granules – Seasoning makes this sandwich, so shake, shake, shake. Shake your bottle.
Avocado – Our goal is easy mashed avocado. While in the half, slice then slash a few pieces the opposite direction. Scoop, then knife/spatula gently across the mayo or mustard until smooth and creamy.
Cucumber/Red Onion/Tomato – I wasn’t planning to post this sandwich until half through the making. I was also about to eat the cutting board so flubbed my own sandwich. For Sublime Sandwich practices, please do as I type and not as ravenous did ;D Line thin cut cucumber atop the mayo/avocado, then add fairly slim red onion and tomato (this helps cucumber play nice, not popping out of place).
Bell Pepper – All colors of bell pepper welcome. Full size and baby bells please, we’re happy you can join in this momentous sandwich making occasion. I usually slice thin but we had left over diced from breakfast the previous morning.
Pickles – Have you experienced Bubbies Bread and Butter pickles? If not, this pickle will change your pickle eating life. News flash! They may still be selling these wonder pickles at Costco, so strike while they’re hot! I’m not into sweet pickles, but our refrigerator and this sandwich refuse to go without. Because sweet, I tear the pickle in half. Dill pickle and this sandwich? But of course.
Secret Sandwich Ingredient – Fresh oregano. Mine was lookin’ a little dank but I didn’t care because little goes a long way in a sandwich or salad for the matter. So fresh I could weed through and find. A bite with a torn piece of oregano, to the moon with me!
And on we go with this beauty
Alfalfa Sprouts! More like magical sprouts. I tried a number of sprout varieties but with their delicate taste and crunch, back to alfalfa I go. It’s a fine day when sprouts are in the house but if not, we double the lettuce.
Romaine Lettuce – delicate and whimsical is a sprout’s crunch but substantial’s needed. Romaine.
Our stores were out for a few weeks, so adjusted sails, red leaf it was on this day. Normally, dry romaine, part with and without the heart on each half does a sandwich greeaat!
A sandwich a mouth can fit.
One that doesn’t wrack the roof of that mouth.

Or put the sandwich in a container and wait for the next day or even two, having something else in the meantime.
I prefer a sandwich that macerates but every so often, think I may want fresh.
My mom’s going to be sick with me telling you this, then call saying, “I didn’t raise you like this!”
Sublime Veggie Sandwich
Ingredients:
- 2 pieces (90g) Dave's Killer Bread - Good Seed (yellow label) - or equivalent
- 1-1½ Tablespoons mayonnaise - or hummus
- 1-2 Tablespoons mustard
- 1/4 teaspoon cracked or dash pepper
- 1/8 teaspoon garlic granules
- ⅛-¼ avocado, thin cross sliced - in avocado half
- 16 slices english cucumber, thin sliced
- 1 round red onion, thin sliced and halved
- 4 slices tomato, thin sliced
- 1-1½ large baby bell, thin sliced - or 1/4 cup whole bell, thin sliced
- 1/2 cup alfalfa sprouts
- 1 large romaine lettuce leaf, broken in two - washed and well dried
Instructions
- Spread mayonnaise on one side of the bread and mustard on the other. Scoop crosscut avocado over the mayonnaise then spread end to end, gently mixing/mashing the two. Season with pepper and garlic granules, then overlap cucumber slices. Top with red onion, bell pepper and tomato. Add sprouts and romaine lettuce, then place top bread. Cut, plate, admire and eat.
